You can probably rule out MSG in Chinese food as a candidate. If I had to take a guess it could be the common denominator in all Chinese food which is heavy in oil and/or, unfortunately, typically not-so-fresh ingredients (resulting in a very short or non existent fridge life). I can't say that particular restaurant or cuisine type in your area is bad because I've never personally seen it, but sadly most fall into that stereotype.
